Fettuccine Alfredo Recipe


I personally am a total freak for pasta, especially during the colder months when I am longing for rich, decadent comfort food. This pasta dish for one takes about 20 minutes to whip up, and is so amazing and authentic you’ll swear you just ate at Nonna’s kitchen in Sicily 😉


1 cup half&half cream
1/4 cup parmesan cheese
2-3 tbsp onion
2-3 cloves fresh garlic
3 heaping tbsp butter
Fresh black pepper
2 pinches of nutmeg
1 serving sized handful fettuccine noodles

First, melt butter in saucepan on low heat
While butter is melting mince both onion and garlic then add to saucepan
Cook until garlic and onion have softened
Add cream to pan and stir well
Then whisk in parmesan cheese, salt&pepper and one pinch of nutmeg
Turn saucepan up to medium high-heat while stir mixture constantly
As soon as you start to see the sauce emulsify turn your burner down to low heat
Whisk sauce once more and leave on burner
Prepare fettuccine noodles according to package directions, but take off heat early leaving pasta noodles partially under-cooked. (they are to be finished in the alfredo sauce, which gives them more flavor and makes them more tender)
At this time you’ll want to add your drained fettuccine noodles to your alfredo sauce
Then, take two forks and gently coat noodles in alfredo sauce.
Continue this motion until you see all excess sauce dry up and soak into noodles (don’t be afraid to turn up the heat a bit to speed up the absorbing process if it’s taking too long)
After noodles have absorbed excess alfredo sauce add them to your plate/bowl top with more salt&pepper and other pinch of nutmeg.
